Everybody Do The Cool Whip!




As a kid we always used "COOL WHIP whipped topping" with all our desserts. Specially when it came to pumpkin or apple pie during the holidays! That was my favorite! And I honestly don’t remember a holiday without. And to this day, I still use it on my pies. I also loved to eat the COOL WHIP with fresh fruit! Made it that much better. 
Now, as an adult, I enjoy eating my fruit with the COOL WHIP Lite. Makes me feel a little bit better that it's not all the calories, but it's still just as sweet and tasty! And I love letting my daughter eat it on her fruit. She loves the stuff! She dips her strawberries in it and then says “Mmmm, Yummy!!”



Last year was the first year I made my husband a cake with the COOL WHIP frosting. He LOVED it! And it’s so easy to make too.
I'm not a fan of the tub of frosting that you can buy already made to just slap on a cake. I enjoy making my own using COOL WHIP! It's so quick and easy, and so tasty!! And it comes out so rich and creamy. It’s the best I’ve ever tasted, by far!

All you do is combine these items:
·  1 cup milk
·  1 (3 1/2 ounce) package instant pudding mix {any flavor}
· 1/4 cup powdered sugar
· 8 ounces COOL WHIP

· Mix pudding mix, sugar and milk.
· Beat with wire whisk for 2 minutes.
· Add COOL WHIP and mix well!

And, there you have it! Probably the worlds BEST homemade frosting you will ever taste! To Die For!
It’s funny to think about how things kind of follow a certain path. When I was a kid, we used COOL WHIP for our desserts or fruits, and now that I’m a Mommy, I use it in my family and serve it with those special treats! Make the homemade frosting with it because I think that it gives it that little special touch of {this is my creation}. I feel like it’s so much better and using a little bit of food coloring you can make it any color you want, and I think that’s the best part about using it in the homemade frosting! You can create any theme you want for the cake of your choice. Birthdays, holidays or whatever it may be! I know that come this August, I’ll be making my daughters 2nd birthday cake and I know for sure I’ll be making the frosting and using our tried and true COOL WHIP frosting recipe! Can’t ever go wrong with that!

Food, Food and more Food

It's been quite awhile since I have posted about food and my pinsperations for food...so here goes!

I made this http://pinterest.com/pin/166633254932335310/ for the Christmas Pot Luck at work, and seriously, it didn't last...by the time I had the chance to grab a bite, it was ALMOST gone. There was like 2 servings left. Everybody was just ranting and raving about how good they were, and wanted the recipe!

I wasn't sure how it would taste at first, and I had never bought an Avocado before...so I was that person googleing how to pick a good Avocado while I was standing in the middle of the produce section of the grocery store. LOL! But for real though, Avocado, Mozzerella, and Pepperoni. What's better then that?!

It was tasty, but there was way too much pasta to "stuff" so we really weren't too fond of it. That's ok though. I'll try it again sometime soon.

Mom/Wife Fail

Last night was my first Pinterest dinner FAIL....I tried to make the White Chicken Enchiladas....but it didn't go quite as planned. The recipe calls for 2 CUPS of chicken broth. NOT 2 CANS...which is what I use. UGH. They tasted good, but they were SOGGY....so that sucked some major ass. Oh well! Onto the next recipe.
Ok, now onto my Mommy fail. So, Sunday night we went to the In Laws for dinner. We had tacos with all the fixings. Lettuce, tomatoes, onions, cheese, avocados, sour cream and taco sauce. So, we were eating, and Chloe had already eaten some of her dinner. We put her in the high chair next to us, and we gave her some lettuce, and some avocados. She had never liked the avocados before, and she was actually eating them. So I gave her a few pieces. So then I went to the store on Monday to get some stuff to make dinner. I bought an avocado because Chloe liked it so much, that I thought I would give her a little bit for dinner for the next few nights. I didn't end up giving her any Monday, but I gave her some on Tuesday. And then yesterday when I picked her up from Day Care they told me that her butt was really red and she was having a hard time pooping  because her butt hurt. I thought that it was just another diaper rash, so when we got home I fed her per normal and gave her the last of the avocado...DUH....I shouldn't have done that. I wasn't even thinking. I gave her some prunes to make it easier for her to poop. Girl gobbled them up like a maniac! She loves prunes! But then when it came time to give her a bath poor girl couldn't even sit in the tub. Her butt hurt that bad! So I washed her up while she stood there, got her out, dried her off, put her lotion on and put some maalox/aquaphor mixture on her bottom. She screamed, of course, but once I rubbed it in, it made her feel a lot better. That mixture is the BOMB.com, ya'll! Let me tell you! Thanks to Shannon Dew for telling me about that!
So anyways, the whole point of this is that I basically realized, after 3 nights of having avocados, that she just might be allergic to them. That's the only thing that I can think of. That's the only thing that she's had out of the ordinary stuff that she usually eats...and she's not been THIS red for a while. So, I'm going to lay off the avocados and just love her and wait for her butt to clear up and never give her avocados ever again. Well, for awhile at least.
I feel like a total Mom fail, and I feel super dumb for not realizing this sooner. But I never really had the opportunity to think about it. The last time (this summer) I tried to give her avocados, she didn't like them. So she didn't eat any for us to even see if they agreed with her or not. Bad thing is, she LOVED them this time...and when I gave them to her last night, I was only going to give her 1 slice, but when I took the other slice away she asked for more. So I just gave it to her. So I might cry because I'm sure that her butt is going to be even worse today then it was last night. I just hope that it heals good and fast. Wish me luck guys! I love my girl, and I hate seeing her in pain and uncomfortable like this.
So there is my rant about my Mommy/Wife fail. The Mommy one a little bit harder on me, obviously.

Nothing Major Monday

I wish that I had something more interesting to blog about this monday...but I don't. Seems like a lot of the lovely ladies that I follow are all posting about pregnancies and all kinds of really great news....me...not so much. LOL! But I'm ok with that! We're not ready AT ALL for another pregnancy right now. We can't even move in our house that we have now....much less find a new house to move around in. LOL!
Speaking of new houses. Our search continues. We have seen so many houses, that I can't even count anymore. It's redonkulous....but I guess that's why they call it house hunting. We've seen quite a few that seemed to be great choices for us, but there was just 1 or 2 things that we couldn't stand about it. Or the main floor was PERFECT, but the upstairs had a REALLY narrow hallway, and the master bathroom SUCKED ass!! Or the house was like 90% there...had everything that we could have possibly wanted, but there was ABSOLUTELY NO backyard. UGH....so, for now the search continues. We have a very picky checklist that we just can't overlook. We are a family with a 15 month old toddler that is running around the house like she owns it, she's got A TON of toys, and clothes and shoes, and with Christmas right around the corner, she will be getting a TON MORE toys and clothes and shoes. LOL! Girl needs a play room AND a bigger closet. Momma and Daddy need more closet space. As we speak, all my clothes are STUFFED into a TINY ass closet in our bedroom...with literally NO more room to add. Husband has his shirts, hoodies and Jerseys hung on the top rack of Chloe's closet. And he has his work shirts and pants hung in the hallway closet with all of our fancy clothes hung on the door of the hallway closet by a screw that is hanging by literally a thread. And then he also has his jeans and shorts hung in the breezeway on a makeshift thing that we have in there...so there's that. Would you agree that we need a walk in closet that we can put ALL of our EVERY season clothes into, along with shoes and all that...um, YES PLEASE!
Also on the house checklist, We need a big back yard. Now, we're not talking about acres here...but something comparable to what we have now. As little as this house is, we do have a decent back yard. But with a growing toddler, that's just something that we would want. And if we even decide to expand our pet family to a dog...it would be nice to have.  
We also want a nice kitchen, and main floor laundry. If we LOVE the house, and the laundry is in the basement, that wouldn't be a detour-ant, but it's something that would be nice to have. Also, a nice living room...it's just a must for us! We need the room for Chloe to run around. She's been walking like a pro for the past month and a half, and she is currently working on her running skills. But she really doesn't have the room to do that right now. So, I'm sure she does all her best face planting running at day care during the week.
Oh, and last night I made the Bubble Up Enchiladas....thanks to Pinterest and Shannon Dew. It was so delish!! Up next for this week. Chicken and Cheese lasagna roll ups! I will let you know how they turn out! Our grocery shopping experience was interesting on Saturday night. I'd never bought feta or Ricotta before, so I had to ask for help. LOL!!
So, that's about it for this Monday. I really didn't have anything fun to blog about, so this was a poor excuse for something good...but I hope you all enjoy it. Stay tuned for "Ask me Anything" tomorrow!! This should be good!!
